Barking Rocks Winery
Hey Cru,
May 23, 2008
The vines have recovered from the late freeze, there is some fruit hanging and all seems
well as we head into summer.  This past week we have combined forces with Cullen
Crisp of Fall Creek Farms in Acton and have applied sound wine making practices to a
pile of strawberries.  As you can imagine we jumped back on the learning curve and as
always, it hurt.  Picking 300 pounds of fruit paled to the effort of taking off the little green
caps.  The chemistry wasn’t even close to any grape I have ever crushed.  But, as of this
writing we do in fact have something very red in a stainless steel tank fermenting at 57
degrees Fahrenheit.  You never know until you try.  Start thinking about naming
suggestions for this product and let me know if something clever comes to mind.

Our first Friday gathering in June will be on the 6th from 7 till 11:00 and we are excited to
be once again featuring Jeff Posey.  His debut cd Pocketful has gained some high praise.
The Academy of Texas Music honored it with two nominations; ALBUM OF THE YEAR and
Producer of the Year, John M. Greenberg.  Posey has been honing the craft of songwriting
for well over a decade. As a writer his honest, poignant lyrics and vivid storytelling have
already inspired some lofty comparisons and earned high praise from peers and critics.
He is a three-time finalist in the Kerrville Folk Festival's "New Folk Competition" and has
quietly produced an impressive collection of songs recorded and performed by other
talented, independent artists.

In addition, on first Friday our friend John Boyd (rocket man) is going to launch one before
it gets dark.  Some lawn chairs just may be the ticket. So bring your morsels, attitudes and
some bug spray and we will pop the appropriate corks to make the occasion flow.

For those forgetful friends, Fathers Day is the middle of June and a big red is the best gift I
can think of.

Hope to see you soon and thanks for your continued support.  Our cellar will be waiting for
you.
As ever, Tiberia

SAN MARTINO WINERY & VINEYARDS
Ooppss! Another Month is gone!

It is hard to believe it but another month has come and gone. I am one month older but I
don’t feel much wiser! The vineyards are getting fuller by the day and the annual fight with
vine black rot already started. These are some of my favorite times of the year as I watch
the cycle of life starting all over again. Each new leaf carries the promise of a wonderful
harvest and the anticipation of this event is what provides me the energy to do this job
each season. With so much to worry about each day such gas prices, food prices,
employment or the lack of, mortgages, college costs, medical cost, etc, etc, it is
invigorating watching nature rejuvenate the trees, the vineyards, and the soil back to its
pristine condition as it was last spring. This is a constant in my life that is reassuring and
reminds me that all the stress that we feel is just temporary; a new day will come
tomorrow with or without us. Personally, I prefer to be there when the sun comes out!
Sometimes we need to uncouple from a world that is causing us to age before our time.
My way of “uncoupling” is to walk the vineyards at sunset with a glass of wine made at San
Martino Winery & Vineyards. I love the smell of green leaves, the feel of the soil beneath my
feet, the music of the wind as it moves through cedars and, of course, my glass of wine.
For a few moments nothing else exists and I am able to reconnect with my inner self until
a mosquito reminds me who is really in charge out in nature.

May is Bottling Month

There is nothing more frustrating for a winemaker than to see his wines in a tank and not
in the hands of customers. As our attention got slightly diverted over the last four months
with dinners and lunches at the winery it is now time to get the wine into the bottles so you
can start enjoying them. As such, you may notice not too much activity as far as events is
concerned during the month of May. We will be bottling each weekend and even some
nights so we can empty the tanks before the 08 harvest starts. Bottling is the least
enjoyable functions I perform at the winery and the darned bottling system is always
breaking down. But I must tip my hat to all the volunteers that come week after week to
help us. Without them we would be drinking wine out of hoses! We have “only” about
40,000 bottles of wine inside the tanks and every ounce has to be out before the middle of
August. I am already tired thinking about it! In any case, we will not be doing dinners and
lunches during May as we spend our energy emptying the tanks.

Jazz in the Vineyards and Other Events

May 3rd we have a special treat for everyone. The Toni Palos Trio will be performing at the
winery. This group was the first trio to play at the House of Blues in Dallas. Bring a picnic,
grab a chair and enjoy a bottle (or two) of our wine while “uncoupling” from the world and
listening to jazz. NOTE: No outside drinks of ANY KIND will be permitted during this event.
Wine, soft drinks, and bottle water will be available in the tasting room. Bring a picnic,
maybe a lawn chair since we don’t know if 5 or 150 people may show up and come by to
forget about the world for a couple of hours. The weather person said that it is going to be
beautiful if a bit cool with temperatures in the low 70s by concert time. These events, as all
of our evening events, are for adults only please.

May 10th is our first ever Mom’s Night Out. This is a five course meal with champagne and
our best wines only for mom. Space is very limited and only 4 spots are left. Unfortunately
(or fortunately) this is only for mom and adult companions. Several people asked about
bringing the little tikes… well... we will have alcohol being served and other adults will be
there and... there is no room for the little ones. Dad, get a baby sitter if you want to bring
mom. Or better yet, mom leave the kids with dad and you come on over!

June 1st is our next wine club social and it is also San Martino’s birthday along with
Bruiser’s own little birthday. Make sure that you sign up early because space is limited
and you don’t want to miss the party. Again, space is limited and please... if you change
your mind let us know so we can open the space to someone that wants to show up! We
will have a San Martino cake along with a doggy bone cake for Bruiser. We will taste new
wine releases and enjoy some wonderful jazz. As part of this fun event we will have the
first ever “outrageous outfit” contest. Everyone is welcome to wear the most outrageous
outfit they have in their closet. Maybe those polyester pants back from the 70s or those bell-
bottom jeans from the 60s. In any case, the most outrageous outfit will get a special price.
Please… no costumes; just outfits that you don’t want to be shown in public that are still in
your closet... the kind that makes your kids say "you are so retro!"

For those that like to chat instead of listening to the music we will have a great setup with
tables and chairs a bit further from the band so you can hear each other. Given the limited
space, club socials are only for our club members; no guests please because we want to
make sure to have space for as many club members as possible. As usual we will have
some appetizers for as long as they last so you are welcome to bring a picnic if you wish.
We will provide the Jazz band and this will be the last social until fall 08!

Check these and all of other upcoming events on our Web site at http://sanmartinowinery.
com/events.htm

New Wines and Sold Out Wines

Our customers keep on creating a supply problem for us and we love it. We sold out of our
Merlot and regular Cabernet Sauvignon 2005. The Blanc du Bois is gone along with the
Reserve Syrah and Rosado. But we just released our Ramos Cabernet 2005, Cabernet
Reserve 2005 and we decided to release earlier than anticipated the Concept.

A brand new and very limited Cabernet Sauvignon Special Barrel Selection 2005 will go on
sale May 1st. This is Cabernet Sauvignon from Newsom Vineyards that we kept in the
barrel for 30 months allowing it to age and develop some very complex character. Only 47
cases were made and it is now available to everyone for a price of $28/bottle or $22.40
/bottle to club members. I find this a marvelous wine that goes great with a steak.

A new Merlot will be released May 8th along with Tempranillo 05. We hope to release a
new Sangiovese and a Reserve Syrah by the end of May as well as our first ever Pinot
Gris. We just need the bottling line to work properly so we can keep releasing wines that
are ready for primetime.

To All Wine Club Members of San Martino

The next release of the Original Wine Club and the Owner's Wine Club will be June 1st
about one week before it is usually released. The reason for this is that we are taking a
group of customers on our annual trip and this year we are going to Spain and Portugal on
June 20th so we need to make sure that the release is ready before then. At this point the
Original Club is set to receive Sangiovese and Tempranillo but this is subject to change.
The Owner's Club will be receiving a Ramos Cab 04 and a Ramos Cab 05. All of these
releases are incredible wines and we hope that you will enjoy them as much as we
enjoyed making them.

This is my shameless plug for the wine club! If you are not a member, then you are
missing on some incredible wines and opportunities. We have club socials about every
two months with special music, food and/or wine but above all some great friendships are
created at these events. In addition, you get 20% off all wines and many of the food items
and access to some wines and venues not available to anyone else. If you visit us more
than twice per year then it is a great deal! If you don't visit us but once per year or if you
have not come by the winery yet, then you are missing the best little wine experience in
Texas and east of Napa. With the cost of gas going "through the roof", airfares going up
and everything else costing more than ever, why go to Napa when you have it right here in
Rockwall? Fantastic wine and a handsome winemaker, what else can you want?

There you have it, my shameless plug for the winery. I had to do it otherwise Maria threaten
to reduce my "pay check." Thank you for all you do for us and for your support; without it we
couldn't do what we do!!!

Bottled Blunders

By Natalie MacLean

My friends know that I write about wine for a living; and over the years, they've sought my
counsel as earnestly as they would a physician friend for advice about their ailments. So
from one who has been thrust into the role of a vinous Agony Aunt, here are some
solutions that might get you through your next battle over the bottle—and avoid horrifying
the wine snob who may be lurking in the group.

The situation: Your friends explain to you that shaking the champagne before opening it
increases the number of bubbles. To your horror, they start shaking the bottle like Formula
One winners. You have nightmare visions of the cork ricocheting off the antique mirror and
splintering the china cabinet before lodging in the soufflé.

The solution: Gently but firmly bring the motion to a halt by resting your hand on theirs, and
talking in the low, soothing voice used by hostage negotiators. Calm them with distracting
physics trivia—such as the fact that the air pressure of champagne is three times that of
your car tires, and shouldn't be toyed with. Should technical explanations fail, you can
always resort to equally bizarre logic: tell them the bubbles are so delicate that they burst
when shaken, leaving the wine flat.

The situation: Your sister-in-law has just spilled red wine on your white carpet. As the stain
widens like the pool of blood at a crime scene, you hear her say that you should have
replaced the carpet long ago anyway.

The solution: You could say you've been planning to tie-dye the rug anyway, or that you'll
just put the Venus flytrap plant on that spot (a bit of a stretch when the spot is in the middle
of the carpet).

But the best solution is to use some soda water to remove the stain, or a spray product
such as Wine Away (available in most wine specialty stores). For future occasions, apply
the old rule about food and wine matching to your flooring: serve only white wines on white
carpets and red wines on red carpets.

The situation: You've had a wonderful meal in a restaurant, and splurged on a special
$200 bottle. Do you tip the beaming sommelier on the full price of the wine? Should you tip
the sommelier separately from the waiter?

The solution: In many restaurants, waiters share their tips with other staff: cook,
bartenders and sommeliers. However, if the sommelier provided truly great service, you
may feel like tipping separately. It's reasonable to pay 15 to 20 per cent of the wine's pre-
tax price-but cap the tip for the very highest wine prices. Anything topping your monthly
mortgage payment can seem excessive.

The situation: You've just poured a fine vintage German riesling, when your friend asks for
some ginger ale to make a spritzer.

The solution: Not everyone savours the nuances of fine wine; some people simply prefer
something refreshing. But that's no reason to dilute the good stuff. Offer to get the ginger
ale in the kitchen, and whisk the wine glass of riesling away (don't bother explaining why
you can't bring the soda to the table). In the kitchen, pour the good stuff into another glass
(your next one) and substitute a reliable "value brand" of wine, mix with ginger ale and
serve.

The situation: You're proud of your limited-edition Napa Valley cabernet: after standing in
line to buy it, you lugged it back home in your suitcase and you carefully stored it your cellar
for several years. Then you take the coveted bottle to share with friends at their home with
dinner. They blithely put the bottle aside on the shelf while offering you "the wine that's
already open."

The solution: If you want to drink your own wine, make the fact clear in advance: call ahead
to ask your host which wine you can bring to complement the dinner. Short of decanting
the wine in the car, there are several strategies to make your point. When you arrive, stay
alert and agile, ready for your next move. On the doorstep, with corkscrew in hand if
necessary, use the assumptive question technique: "Here's the Californian cabernet for
dinner. Where would you like me to open it to let it breathe?" Of course, if you know from
experience that your hosts always open their own stock, don't bother bringing a bottle you
want to drink.

The situation: After you share your coveted bottle of first-growth Bordeaux with friends, they
want to return the favour. Out comes a bottle with a label you don't recognize; and as you
drink, hints of burnished aluminum and burnt tire unfold in your mouth. With the radiance
of new parents, your friends ask: "How do you like our homemade wine?"

The solution: You could feign an illness that prevents you from drinking. (A pill bottle filled
with red Smarties is a credible prop.) You could accidentally topple your glass with a
cheerful "Oops!" (though this tactic only works for one glass, and must be quickly followed
by the selected illness). Your best bet is to sit near the overgrown fern (which has likely
already been well watered with Chateau Plonk). You can grit your teeth and actually sip the
industrial solution, saying that it's unlike anything you've ever tasted. And as a last resort,
you can drink up—recognizing your sacrifice as a testament to your deep commitment to
this friendship.

Lone Oak Winery
Crimson Oak is a wonderful addition to the line of fine red wines from Lone Oak Winery.
This is a big, full-bodied wine with lots of fresh strawberry and hints of cherry on the
palate.  Minimal oak aging compliments the fruit character of this wine while adding to the
flavor profiles and structure.  A nice, lingering aftertaste will make this wine one to
remember.  Bottled March 15, 2008.  Good now through 2013.

warmer weather.
Anticipated release date is April 15, 2008.

Zin Valle Vineyards ‘shows’ Gewürztraminer in California
Zin Valle was invited to participate in the International Alsace Varietals Festival located in
the pastoral Anderson Valley. The “Valley” is an isolated rural district in the California
Coastal Mountain Range, 100 miles northwest of San Francisco and 15 miles from the
Mendocino coast. Anderson Valley’s first wineries recognized this region as having an
ideal climate for Alsace varietals, a region in Northwest France bordering Germany. The
festival featured Alsace varietals from around the world: Gewürztraminer, Riesling, Pinot
Gris, Pinot Blanc and Muscat. Zin Valle’s presence was certainly a novelty because of our
Texas location. However, our 2006 Gewürztraminer was sourced from the Farrington
Vineyards of Anderson Valley and then brought to Zin Valle to be ‘finished’ and bottled.
This wine is offered at the winery for $18 per bottle.

ZV’s Award Winning Wines 2008
Zin Valle won a Bronze Medal Reserve Class Champion for it’s 2006 Gewürztraminer at
the Houston Livestock and Rodeo International Wine Competition. Over 1,900 wines from
606 wineries and 16 countries were competing in this event. Zin Valle’s most recent
triumph was at the 24th Annual Dallas Morning News Wine Competition, where 3,322
wines were submitted from 23 states and 18 different countries. Zin Valle’s Brut Sparkling
Wine and the 2006 Gewürztraminer are “rumored” to have received gold medals. More on
this later when the official results are released.

Did Someone Say “Party”!
Let us help you make the most of your party planning. Our barrel room is the perfect place

Zin Valle and 2900 host Master Sommelier and Exec. Chef Steven Geddes
Zin Valle recently hosted Master Sommelier Steven Geddes.
Steven is only one of 250 Master Sommeliers in the world.
Steven sampled our wines and chose our 2006 Dry
Gerwurtztraminer to pair with one of the five courses recently
served at the opening of Mark Hein’s “2900” upscale restaurant

opened Mark Millers, Charlie Trotters and Charlie Palmers’ restaurants in Las
Vegas, Nevada. He received the first Wine Spectator Grand Award for his wine

Tales from the Vineyard
It’s that time again where we are entering the 2008 grape growing season. The plants
have been pruned once -“rough pruning” and then again for “final pruning”. Some minimal
fertilizer has been added to the plants and now we wait for bud break! Of course, there is
the constant management of gophers which “Xena”, our vineyard pooch, seems to have
no interest in managing
Come on out to the vineyard, enjoy a glass of wine on our patio and soak up the tranquility
of the vineyard.

Los Pinos Ranch Vineyards

to make our grape supply more reliable.
Our Black Spanish, (aka, Lenoir) Vineyard will produce it's first crop this year, so lots more
Pinky Tuscandero will be ready for your refreshment soon!

Also I'm happy to say that we are planting a nice vineyard out in the West Texas High
Plains AVA, that will feature Sangiovese, Cabernet Sauvignon, and Muscat Canelli.
That'll give us a total of about 20 acres, East Texas combined with West Texas fruit. Given
a production capacity of 5 to 10 tons per acre, and 160 gallons of wine in 1 ton we should
be able to make sufficient wines for all our friends and family!
Thank you all for making our winery what it is, we hope to see you soon!!

San Martino Winery
Our new wine releases are about to hit the tasting room. As you know, outside the
Fairmont Hotel we don’t have wine distribution outside the winery. As it is, we are at 6,400
cases of wine in production and we don’t even have enough for the tasting room as the
demand for our wines continues to grow. The Ramos Cabernet 2004 is sold out along
with the Reserve Chardonnay, Sangiovese, Reserve Syrah, Rosado and others. One of
our best sellers, the Silk, is down to the last 14 cases and we just released almost 1,000
cases in December… Wow! It is a great problem to have and we have you to thank for it.

New Wines Scheduled for Release

Syrah 2006 (release date: 3-1)
Reserve Syrah 2006 (estimated release date: 4-1)
Ramos Cabernet 2005 (estimated release date: 4-1)

Petit Syrah 2005 (estimated release date: 7-1)
Cuvee (estimated release date: 9-1. Club release for Sep)

the Concept (read about this wine in our Web site) (estimated release date: 10-1 if there is
any left as most of it will be sold out as futures. If you are interested in futures of this wine
please email us asap)

It is a breath-taking pace but we must make room for the 2008 harvest.

GLAZER’S DISTRIBUTORS ANNOUNCES THE EXPANSION OF
GLAZER’S BEVERAGE UNIVERSITY
GBU Dean Bill Saul Releases “Wines of the World” Curriculum for the First-Ever
Beverage Distributor External Training Program for Retail Customers
Contact: Louis Zweig
(972) 392-8389
lzweig@glazers.com
DALLAS – Glazer’s Vice President of Strategic Account Education and Development Bill Saul
today announced a major expansion of curriculum to be offered by Glazer’s Beverage University,
the company’s unique eLearning educational website. This eLearning website, open 24/7, offers a
curriculum of courses on product knowledge for wine, distilled spirits, and malt beverage products.
The goal of Glazer’s Beverage University is to provide customers with an on-going, comprehensive
resource for educational materials on adult beverage products and industry best practices.
Now available to all users is “Wines of the World”, a seven unit program that addresses wine
production in each of the world’s major wine producing countries including France, Italy, Germany,
Spain, Portugal, Australia, New Zealand, Chile, Argentina and the United States. Within each
country’s unit, the focus is on production zones, geography, the impact of soil and climate on the
vinification process, production methods, major grape varieties and the wines they produce, as well
as quality classification and wine laws as they pertain to labeling. Students are given a pre-test to
determine their existing level of knowledge and a more extensive mastery test at the conclusion of
each unit. Each unit is narrated and supported by audio and video glossaries.
Don Pratt, Glazer’s Senior Vice President Corporate Accounts, said “Glazer’s Beverage University
is an important part of Glazer’s strategic account initiative. Today’s expansion demonstrates
Glazer’s commitment to helping our customers and suppliers build brands.”
Bill Saul said, “Glazer’s Beverage University resides in a virtual Learning Management System, or

A Tilt of the Hat to Jamie Davies

Oliver Styles
Jamie Davies, co-founder of Schramsberg winery and a pioneer of American sparkling
wines, has died aged 73.
Davies, along with her husband Jack, revived the ailing Schramsberg winery, in the
Diamond Mountain region of the Napa Valley, in 1965.
The couple went on to become leaders in sparkling wine production in the US.
Davies had been fighting Parkinson's disease for several years and a recent legal dispute
with her estranged son John, over the sale of his shares in the family business, was
ongoing.
Davies' son Hugh took over the running of the winery three years ago. He and his brother
Bill are understood to have been with their mother when she died.
'She was certainly one of the great pioneers in the Napa Valley and probably in all of
American wine,' Mary Novak, owner of Spottswoode Winery, told local newspaper the San
Fransisco Chronicle.
A memorial service will take place on Sunday at Schramsberg Vineyards in Calastoga at
1pm.
Visiting and taking the tour through the caves, I have to say this was one of the most
delightful tasting sparkling whites, champagnes...

Whats good for the Goose
January 16, 2008

In a ruling with national implications, Chief Judge Sidney Fitzwater of U.S. District Court of
Northern Texas declared on Tuesday -January 15, 2008 that a Texas law violated the
federal constitution, discriminating against out-of-state wine merchants.

So-It is now legal for commercial entities outside of Texas to sell and ship wine directly
to consumers in Texas. .

Chief Judge Sidney Fitzwater was born in 1953, began his service in 1986 and was
appointed by President Ronald Regan.Judge Fitzwater  said Texas could not prohibit
Texans from receiving wine shipped from out-of-state merchants if it allowed in-state
merchants to ship wine to them

The plaintiff was Siesta Village Market, a Florida merchant. The defendant was Texas'
state government.

How we got here.
A lawsuit was filed in U.S. District Court on April 3, 2006, challenging the constitutionality of
certain provisions of the Alcoholic Beverage Code and seeking an injunction barring their
enforcement. The lawsuit claimed that sections of the Code discriminate against
interstate commerce, and violate the Interstate Commerce Clause, by authorizing in-state
wine retailers to ship wine directly to Texas consumers while denying out-of-state wine
retailers the same right.

The Texas Alcoholic Beverage Commission agreed to a preliminary injunction on May 22,
2006, stating that TABC will not interfere with sales or shipments of wine from out-of-state
retailers to Texas consumers. Effective immediately, out-of-state retailers may ship wine to
adult Texas consumers without applying for or obtaining a permit from the Texas Alcoholic
Beverage Commission. The wine must be shipped via permitted carrier and may not be
sold to minors. It may be shipped to any location in Texas.

This injunction does not alter our agency’s permitting practice for wineries seeking a
Direct Shipper’s Permit. This injunction will be binding through the life of the lawsuit filed
on April 3, 2006.

Texas consumers continued to be restricted to importing no more than three gallons of
wine every 30 days.

The Speciality Wine Retailers Association, a California-based trade group that supported
Siesta's suit, said the outcome 'provides wine retailers with the same protection against
economic discrimination' that wineries obtained in a ground-breaking US Supreme Court
decision in 2005.

That 2005 'seminal case held that no state may discriminate against out-of-state wine
shippers' - that is, wineries - 'for the purpose of protecting in-state competitors,' the
association said.

Yesterday's Dallas ruling, the association added, 'completely rejected the claims by the
state of Texas, Texas wine wholesalers, as well as lawmakers and wholesalers in other
states' that the Supreme Court decision did not apply to retailers.

However, the association found bizarre and possibly illegal a segment of Fitzwater's
decision that held that Texas could require out-of-state merchants to buy wines from
Texas wholesalers.

Advocates of free trade may champion the Texas ruling in New York and Michigan, where
retailer-shipping cases are pending, as well as in Maine, Tennessee and Virginia, where
wine-shipping legislation is being contemplated.

About 16 states permit direct wine shipments from out-of-state merchants.

Wholesalers, whose trade association is the Wine and Spirits Wholesalers of America,
thought the 2005 Supreme Court decision was not relevant to the Texas case because the
Supreme Court also upheld the states' three-tier systems under which producers sell to
wholesalers, who sell to merchants, who sell to the public

Notice Regarding Percentage Volume of Texas Grapes Required by Texas Alcoholic
Beverage Code, Section 16.011

Texas Agriculture Code, Section 12.039, provides that the commissioner of agriculture
may reduce the percentage by volume of fermented juice of Texas grapes, or other fruit,
that wine produced by wineries located in dry areas of Texas must contain under Texas
Alcoholic Beverage Code, Section 16.011.  The commissioner has received a report from
the Texas Wine Marketing Research Institute for the 2007 Texas wine grape crop year, as
provided for in Section 12.039, and upon review of that report and other information
provided to the Commissioner regarding the 2007 wine grape crop, has determined that
there is sufficient information to reduce from 75% to 30% the percentage of Texas-grown
grapes and fruit that is required by Section 16.011 to be in wine produced by wineries
located in dry areas of Texas for the 2008 calendar year.
In accordance with Section 12.039(g), if a winery in a dry area of Texas finds, even after the
commissioner’s reduction of the percentage volume requirement to 30%, that a particular
variety of grape or other fruit is not available to a level sufficient for the winery to meet the
winery's estimated 2008 production for the relevant year, this winery may request that the
commissioner further reduce the percentage requirement in Section 16.011.  The winery
must submit documentation to the commissioner substantiating that the winery has not
been able to acquire those grapes or other fruit grown in this state in an amount sufficient
to meet the winery's production needs and to comply with requirements of Section 16.011,
as adjusted by the commissioner.  If the commissioner determines that there is not a
sufficient quantity of that variety of grapes or other fruit grown in this state to meet the
needs of that winery, the commissioner may further reduce the percentage requirement for
wine bottled during the remainder of the calendar year that contains that variety of grape or
fruit for that winery.
Filed with the Office of the Secretary of State on December 19, 2007.
The new rate is effective January 1, 2008, and is effective for the calendar year 2008.

We had a Great Time on the Cruise!
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
I got to spend quality time with my aunt from Houston that had attended the Elevation of
Archbishop DiNardo to a Cardinal in Rome.  She said she was about 8 feet from the Pope
and in her opinion the Pope had had a facelift.  I got so tickled at the thought of the Pope
going in for a facelift---The Doctor would look at his chart and say, "Mr. Ratzinger, you are
here for a face lift and your from Rome, Italy?? What do you do for a living?  "Well I am
really from Germany and my title is Pope Benedict XVI and I am head of the Roman
Catholic Church".  Can you imagine what the doctor would be thinking?  Too funny----(but it
didn't happen).
Debbie Simmons with Supertravel out of Clear Lake did a great job of setting up our 4th
annual Wine Cruise.  It was a 4 Night Cruise to the Western Caribbean, Cozemel, Mexico
being our only stop. This year was really special with Robert Greaney featured as our
musical guest.  We had 134 people and the Carnival Ship Ecstasy was a great venue.  We
had our own private party in a private bar on two afternoons.  We had several members
from the Santa Fe Graduating Class of 1969 and lots of friends of Haak Winery
-Haak
Wines featured were Semisweet Blanc du Bois, Cabernet Sauvignon, Pink Pelican, Dry
Blanc du Bois, Tres Tintos, Syrah, Rserve Chardonnay, Tempranillo and our Madeira
Jacquez.  The chef's with Carnival pared our wines with a wonderful display of different
cheeses, crackers and chocolate bits.  Raymond Haak, the winemaker, went over each
wine and discussed paring it with different dishes & cheeses and described how each
wine was made.  Then while we sipped on the wine & cheese everyone danced to the
music of Robert Greaney.  For all single people we had plenty of line dances so no one
was left out of the dancing.  All during each session Debbie had a big selection of door
prizes featuring Haak Wines & Robert Greaney's CD's.  The first day of the cruise we had a
welcome coctail party with drinks provided by Carnival.  While in Cozemel Mexico everyone
enjoyed shopping, snorkling, scuba diving and Margarettas and Nachos.  Our group gets
larger and larger with a LOT of people repeating each year renewing the friendships they
had made the year before.  We look forward to this annual event every year.  Next trip
scheduled is a Germany & France tour May 20-June 2, 2009.  Call Weidman Specialty
Tours  830-990-8849 for reservations and information.
Drinking Wine Could Keep Legs Healthy
A glass or two of wine a day may be good for circulation in the legs, according to a study
published in the Jan. 1 issue of the American Journal of Epidemiology. According to the
research, those who consumed moderate amounts of alcohol showed a lower risk than
nondrinkers of developing lower extremity arterial disease (LEAD), a condition in which the
blood vessels in the leg become damaged.
Miranda Lambert's New Wine Label Draws Tourism To East Texas
Miranda Lambert's New Wine Label Draws Tourism To East Texas 1/05/07
Kerosene, Crazy Ex-Girlfriend, Gunpowder and Lead.  They're some of Miranda's song
titles now turned wine labels.
"The whole wine premise was to take something she loved, or something that would
remind us of her," said Miranda's mom Beverly Lambert.  Miranda's family has been
operating the
Red 55 Winery since last month, and they said it's been a hit even though
Lindale is a dry town.
"As you know my daughter sang about a dry town on her record," said Miranda's dad Rick
Lambert.  "I think it's been so accepted in this community because they're proud of
Miranda and anything she does right now, you know, she's just kind of the golden girl."
The Lambert's were able to operate the little winery because of a 2005 law permitting the
sale of wines, as long as they're made in Texas.  They said it's already bringing a lot of
tourism into East Texas.
"We really get a lot of visitors," said Beverly.  "People driving seven to eight hours to come
to this store."
"Of course, her fans are all about it and buying bottles just to keep, which is a waste,"
laughed Rick.  So, what are some of the meanings behind the names?  The blush,
Electric Pink, is named after Miranda's famous guitar.
"It's kind of taking on its own identity, this electric pink guitar," said Beverly.  "She brings it
out really late in the show and the minute she brings it out people usually go nuts."
Red 55, a heartier merlot-cabernet blend is named after Miranda's first truck, a 1955 Chevy
Step Side.  Then, we know it's a song title, but how appealing does a wine named
Kerosene sound?
"It tastes a little bit better than kerosene, and it might have a little more punch to it too,"
said Beverly.  A new wine label that's already becoming famous in a small town.
The two newest wines, Gunpowder and Lead and Crazy Ex-Girlfriend are being released
to coincide with Miranda's latest single on January 15th.  All the wines range in price from
$16 to $20 a bottle.
questions answered, and learning how food and wine can play nice together (and we don’
Which Regions Toast The Most?
Distinctive wines combined with southern hospitality have vaulted the Texas Hill and
Arkansas Wine Countries to the #2 and #3 spots respectively on the Orbitz Insider Index
fastest-growing list. And the Pacific Northwest is gaining on California as the place to be
when it comes to wine excursions. Three of the top ten fastest-growing regions in the U.S.
hail from points of interest in Washington and Oregon. And before snow starts to fall in the
Midwest, there are a number of growing wine regions that have given destinations in Ohio,
Indiana, Tennessee and Michigan four of the top 10 spots.
The Wine and Food Foundation of Texas
awards $25,000 in grants for education and research in wine, food
The Wine and Food Foundation of Texas awarded $25,000.00 in grants this week as part
of its annual competitive grant awards program. Recipients include Ed Hellman, PhD, with
the Texas Cooperative Extension and Texas Tech University, for renovation of a viticulture
research laboratory in the amount of $20,000.00, and Jane Nickles with the Texas Culinary
Academy in Austin for the development of a wine and food pairing guide and workshop in
the amount of $5,000.00.
The Grant Award Program was spearheaded by the Foundation in 2005 as a way to fulfill
their mission of innovation, education and research in the culinary and viticulture arts. Up
to $25,000 is available annually and all Texas residents, businesses or organizations are
eligible. Thus far, four grants have been awarded through the program, totaling over
$100,000.00.
J. Buckner Hightower, President of the Foundation commented on the program, “The grant
award program is a cornerstone in our efforts to make a difference in the culinary and
viticulture arts. These funds actively encourage and inspire creativity and innovation. We’ve
seen some outstanding proposals and tremendous results, which will positively affect our
state and in some cases, the country.”
This year’s award was shared between two deserving Texans who are making great
strides for education and research in food and wine.
Ed Hellman, PhD is a Viticulture Extension Specialist with the Texas Cooperative
Extension and holds a joint appointment with Texas Tech University. Hellman is a long-
time researcher and a national leader in viticulture Extension. The Texas Cooperative
Extension was awarded $20,000.00 for renovations for a state-of-the-science viticulture
and enology research facility at the Agricultural Research and Extension Center in
Lubbock.
As the Associate Professor of Viticulture, Hellman recognizes the rapid speed at which the
Texas wine industry is growing and the need for expanding research facilities to
accommodate the new program in enology.
“This laboratory will serve as a shared research facility,” Hellman said, “it will encourage
and facilitate close collaboration of the viticulture and enology scientists to address critical
issues of the Texas wine industry.”
Jane Nickles is a wine instructor at the Texas Culinary Academy where she has taught for
nearly ten years and also teaches wine education classes throughout Austin. Last year
her first book Wine Speak 101 was published - a supplement to her series of wine
education seminars under the same name. With the $5,000.00 awarded by The Wine &
Food Foundation of Texas, Ms. Nickles will  write and publish a book in conjunction with a
workshop focused on the art of food and wine pairings. Entitled,  When Wine Met Food, the
book will educate consumers on the mysteries of food and wine parings how food and
wine interact.
“I am more interested in the reasons behind why food and wine work well (or don’t work
well) together,” Nickles said. “I plan to create a ‘system’ of food and wine pairings based
on the rules of taste, flavor and texture” and know how they will interact. The end result
being that “if people know intuitively how to pick the perfect wine for any meal, food, or
occasion they will buy more Texas wine!” hopes Nickles.
Past Foundation grants from the Foundation’s award program include the Sustainable
Food Center, which helped in part to fund the Austin Farmers’ Market; a children’s
bilingual nutrition pilot, Papi’s Kitchen, and also the development of a national web-based
system used by grape growers and researchers for diagnosis of grapevine diseases. The
Foundation also awarded $25,000.00 to KLRU-TV for the production of a film documentary
produced by award-winning producer and director Tom Spencer, The Wine Roads of
Texas. The film is based upon Wes Marshall’s definitive guide on the Texas wine industry.
The Foundation will accept applications for the 2008 grant cycle in beginning in the fall of this year.
Applications will be available this fall on the Foundation’s website www.
winefoodfoundation.org. Donations and memberships to the Foundation can also be
submitted via the Foundation website or by calling the Foundation directly at (512) 327-
7555.
